Mine is smoked salmon, peas, creme fraiche and wasabi paste.
It sounds odd, but it's really yummy!

Has anyone else got a good pasta recipe to share?

I love pasta and salmon that sounds gorgeous. I had a stunning dish in an Italian in Cardiff which was a salmon based sauce poured over Penn, and the garlic bread was the best ever. Didn't like to ask for the recipe. sad.gif

One I use a lot is a very quick and easy one but the herbs make it so fresh and light. I won't put down exact quantities because it all depends on how many you are feeding.

Chopped onion and garlic
Bacon cut into small pieces
Tin of good quality chopped tomatoes
Chopped mushrooms ( large open or if possible chestnut, button will do but not such a good flavour)
Loads of chopped Coriander and Basil
Freshly ground black pepper (no salt as the bacon is salty enough).
Pasta of your choice


Fry the onions and garlic in some extra virgin olive oil (my extravagance) add the bacon and gently fry. When they are nearly done add the mushrooms, then the chopped tomatoes, just before serving add black pepper and fresh herbs to taste. When ready just add and toss the cooked pasta.

I always cook it in a large wok so that I can add the pasta to the sauce and mix it but it's fine spread on the top of a dish of pasta.

Another must is flat garlic bread with plenty of garlic butter and lashings of mozzarella cheese


I also love pasta salad especially with prawns and a good sauce.

When my parents took us to Switzerland in the 60’s for a holiday (my mum is Swiss) my aunt made us, what I called Franies special, a pasta dish which I fell in love with.
Pasta
Sweetcorn
Gherkins
And Tuna fish.
All mixed in.
It has changed over the years slightly; I’ve added cheese, cayenne pepper and various herbs.
My kids loved it.

That sounds good - I think my little pasta lover will like that one (being a tomatoe and bacon kind of guy).
I agree with your comments on mushrooms btw. The open give such a fabulous flavour to any pasta dish (and most of my recipes don't include meat, so I could use that extra oomph!)
I'm also with you on the herb choice - and the no added salt.

Can I say good taste, or is that too cheesey?

I used to date a chef, many moons ago, and he did a similar dish for a party. I think he used to add very finely chopped green pepper as well? Although, being a party, I dare say my memory may be somewhat impaired....

Dunno why tuna works with pickled stuff, but it really seems to. Is it the vinegar and seafood thing (example - South London pubs on a Friday night!)

Love pasta and I often do a pasta bake in the oven then add a tin of salmon or tuna to it at the end.
