 Day out Roast

When we go out for the day on a Sunday, I always do a roast that's ready for when we come back. It's always worked for me anyway.

I brisket of beef
Selection of root veg.
Beef stock
Seasoning (inlcuding powdered English mustard)

Chop the veg and put at the bottom of a deep casserole dish.
Brown off the brisket and put on top of veg, or on a rack. Season and include a layer of mustard powder onto the meat. Rub this in with oil.
Pour stock (cube'll do - biggrin.gif ) into the base of the dish, until it just touches the bottom of the meat.
Bring to the boil on top of the stove, then cover in a double layer of foil and the lid to the casserole.

Put in a very hot oven for 15 minutes, then turn the gas down to simmer. Leave it to cook for as long as you like.

In the meantime, bring a pot of potatoes to the boil, wait until they reach boiling point, then turn off the gas and leave.

When you get in, all you have to do, is put some fat in the oven for the potatoes, and roast them off.

That's a very clever use of time Les.I'll try that.It's like leaving a casserole in the oven, but having a roast dinner without all the fuss standing over the oven & hob.

That sounds just my type of meal for the family Les.....As we shall be going the round of Boot sales on Sunday/Monday your recipe is just the thing for me to get going..Thanks for the idea grouphug.gif
